Tapioca Pearls

Tapioca is a starch obtained from the root of the cassava or yuca. Cassava is a plant native to South America and the West Indies, where its thick, fibrous roots are used in a variety of forms – as flour for baking, for making beer and, of course, tapioca pudding. Tapioca is also suitable for thickening soups or sauces. It is also used to make bubble tea.

Dishes (desserts, porridges, puddings, bubble tea) made with tapioca, ideally in combination with coconut milk, are easily digestible. Tapioca can also be used as a thickener in soups, sauces. The raw material is naturally gluten-free. According to Ayurveda, tapioca has a cooling effect when there is excess bile in the body.

Instructions

When used to thicken soak overnight in lukewarm water, when used in drinks cook until the pearls are soft (about 25 minutes) and chill.

Instructions for pudding: To prepare pudding, pour 100 g of pearls in 300 ml of water and leave to soak overnight. The next day, add 300 ml of milk, sweeten and cook over a low heat, stirring constantly, until thickened.
